James Beard–nominated chef Bruce Kalman has built a career on bold flavors, craftsmanship, and an uncompromising respect for ingredients.
Raised in New Jersey and trained in kitchens from Chicago to Los Angeles, Bruce became nationally recognized through Top Chef, Chopped, Beat Bobby Flay, and as a finalist on BBQ Brawl. He founded BK Brinery, a premium pickle company, and co-founded acclaimed restaurants, including: UNION in Pasadena and Knead & Co. Pasta Bar. He later launched SoulBelly BBQ in Las Vegas, where he reimagines American barbecue through a chef’s lens.
Beyond the kitchen, he fronts the chef rock band Foie Grock, mentors the next generation of culinary talent, and champions sustainable, community-driven food culture.
